Salmon Casserole Recipe8 servings
Ingredients: 2 cans salmon, drained, flaked 1 pound mushrooms, coarsely chopped 1/4 teaspoon each: ground nutmeg, pepper 1/4 cup finely chopped onion 1-2 tablespoons margarine or butter 2 tablespoons flour 1 1/2 cups fat-free milk 1/2 cup unseasoned dry bread crumbs |

Method: Combine salmon, mushrooms, nutmeg, and pepper in 12 x 8-inch baking dish.
Saute onion in margarine in medium saucepan 1 minute, stir in flour and cook 1 minute. Whisk in milk, heat to boiling, whisking until thickened, about 1 minute. Pour over salmon and sprinkle with bread crumbs. Bake, uncovered, at 375 degrees until lightly browned, about 35 minutes. |
