Poached Salmon with Mock Hollandaise Sauce Recipe

Ingredients:

3/4 cup dry white wine or clam juice

1/2 cup water

2 thin slices onion

4 dill or parsley sprigs

1/4 teaspoon each: dried thyme and tarragon leaves

1 bay leaf

4 peppercorns

1/2 teaspoon salt

4 small salmon steaks

Mock Hollandaise Sauce

Chopped parsley, as garnish

4 lemon wedges

Method:

Heat wine, water, onion, herbs, peppercorns, and salt to boiling in medium skillet. Reduce heat and simmer, covered 5 minutes. Add salmon to skillet, simmer, covered, until salmon is cooked and flakes with a fork, 6 to 10 minutes. Serve Mock Hollandaise Sauce over salmon, sprinkle with parsley. Serve with lemon wedges.
