Nicoise Platter Recipe

Nicoise Platter Recipe

6 servings

 

Ingredients:

12 small red potatoes, cooked, quartered

12 ounces green beans, cooked

2 large beets, cooked, cubed

4 Braised Whole Artichokes

3 hard cooked eggs, halved

2 medium tomatoes, cut into wedges

2 cans white tuna in water, drained, flaked

3 cups mixed salad greens

2 tablespoons sliced ripe olives

1 tablespoon capers

1/2 cup fat-free Italian dressing

Salt and pepper, to taste

Aioli

 

Aioli:

1/2 cup fat-free mayonnaise

1 teaspoon each: tarragon vinegar, lemon juice, Dijon mustard

3 cloves garlic, minced

Salt and white pepper, to taste

Method:

Arrange cooked vegetables, Braised Whole Artichokes, eggs, tomatoes, and tuna or greens-lined plates, sprinkle with olives and capers. Drizzle with Italian dressing, sprinkle lightly with salt and peppers. Serve with Aioli.

 

Aioli:

Mix all ingredients, except salt and pepper, season to taste with salt and pepper.
