Halibut and Potato Chowder Recipe4 servings This chunky chowder has a thick, flavorful base of pureed vegetables.
Ingredients: 1 each: chopped large onion, rib celery 1 1/2 cups clam juice 4 cups cubed, peeled potatoes 1 pound halibut, cubed 1 carrot, shredded 1 cup 1% low-fat milk 1 teaspoon dried savory leaves 1/2 - 1 teaspoons hot pepper sauce Salt, to taste 2 slices bacon, cooked crisp, crumbled |

Method: Saute onion and celery in lightly greased large saucepan until light browned, about 5 minutes. Stir in clam juice and potatoes and heat to boiling, reduce heat and simmer, covered until potatoes are tender, about 10 minutes. Process about half the mixture in food processor or blender until smooth; return to saucepan. Heat to boiling; add remaining ingredients, except salt and bacon. Reduce heat and simmer, covered, until halibut is tender and flakes with a fork, about 5 minutes. Season to taste with salt, sprinkle each bowl of soup with bacon.
