Florentine Fish Dinner Recipe

1 can reduced-sodium diced tomatoes, undrained

2 cups frozen chopped spinach, thawed

1 tablespoon olive oil

1/2 teaspoon minced garlic

Salt and pepper, to taste

3 tablespoons grated Parmesan cheese

8 ounces linguine, cooked, warm

1 pound skinless flounder fillets


Combine tomatoes with liquid, spinach, olive oil, and garlic in medium saucepan, heat to boiling. Reduce heat and simmer until thickened to desired consistency, about 10 minutes, season to taste with salt and pepper. Toss sauce and Parmesan cheese with linguine and keep warm.


Cook flounder in lightly greased large skillet over medium heat until flounder is tender and flakes with a fork, 3 to 4 minutes on each side. Sprinkle lightly with salt and pepper. Serve with linguine, sprinkle with Parmesan cheese.
