Fish Baked with Stuffing Recipe

4 servings



1 cup each: chopped onion, sliced mushrooms

1/2 teaspoon minced garlic

1 1/2 cups crumb-type seasoned stuffing mix

3 tablespoons grated Parmesan cheese

1 pound lean white fish fillets

1/4 teaspoon dried basil leaves

Salt and pepper, to taste

1/4 cup dry white wine or chicken broth


Saute onion, mushrooms, and garlic in lightly greased large skillet until onion is tender, 5 to 8 minutes. Stir in stuffing mix and Parmesan cheese, spoon into baking dish. Arrange fish on stuffing, overlapping if necessary, sprinkle with basil, salt and pepper. Pour wine over fish. Bake, covered, at 375 degrees until fish is tender and flakes with a fork, about 20 minutes.
