Crab Chowder with Snow Peas Recipe4 servings This aromatic chowder gets its flavor essence from jasmine rice, gingerroot, and sorrel.
Ingredients: 2 cups clam juice 2 1/2 cups water 1/2 cup jasmine or basmati rice 2 green onions, sliced 1 tablespoon minced gingerroot 2 cans lump crabmeat 2 cups each: snow peas, halved crosswise, torn sorrel or kale leaves 1 tablespoon dry sherry (optional) 1/2 cup 2% reduced-fat milk Salt and pepper, to taste |

Method: Heat clam juice and water to boiling in large saucepan. Stir in rice, green onions, and gingerroot; reduced heat and simmer, covered, until rice is tender about 25 minutes. Stir in remaining ingredients, except salt and pepper, simmer until snow peas are crisp-tender, 3 to 4 minutes. Season to taste with salt and pepper.
