Crab Cakes with Poblano Chili Sauce Recipe

12 ounces Alaskan king, lump or claw crabmeat, finely chopped

1/2 each: finely chopped small onion, medium tomato

1/2 small jalapeno chili, minced

1 egg white

2-4 tablespoons unseasoned dry bread crumbs

1/2 teaspoon each: dried oregano leaves, salt

Flour or unseasoned dry bread crumbs

1 cup Poblano Chili Sauce


Combine crabmeat, onion, tomato, jalapeno chili, and egg white in small bowl, mix in bread crumbs, oregano, and salt. Shape into 4 parties about 1/2 inch thick, coat lightly with flour. Cook patties in lightly greased large skillet over medium heat until cooked through and lightly browned, 3 to 4 minutes on each side. Serve with Poblano Chili Sauce.
