Asparagus Roughy Au Gratin Recipe6 servings
Ingredients: 4 cups cooked rice 1 pound fresh asparagus, sliced 6 orange roughy fillets 1 medium onion, finely chopped 3 tablespoons margarine or butter 1/3 cup all-purpose flour 1 cup each: fat-free milk, shredded reduced-fat Cheddar cheese 1/4 teaspoon each: salt, pepper 1 cup unseasoned dry bread crumbs |

Method: Spoon rice into 13 x 9 inch baking dish; arrange asparagus over rice and top with fish fillets, overlapping if necessary.
Saute onion in margarine in medium saucepan until tender, about 5 minutes. Stir in flour and cook 1 minute. Whisk in milk and heat to boiling, whisking until thickened, about 1 minute. Whisk in cheese, salt and pepper. Spoon sauce over fish; sprinkle with bread crumbs. Bake, covered, at 350 degrees until sauce is bubbly, about 20 minutes. Bake, uncovered, until browned, about 10 minutes. |
