Welsh Rarebit Recipe6 servings Rarebit is also delicious served over sliced ham or chicken breast and asparagus spears on toast.
Ingredients: 1/4 cup finely chopped onion 2 tablespoons margarine or butter 1/4 cup all-purpose flour 2 cups fat-free milk 1/2 cup white wine or fat-free milk 2 ounces light pasteurized processed cheese, cubed 1/2 cup reduced fat sharp Cheddar cheese, cubed 1/4 - 1/2 teaspoon dry mustard White and cayenne pepper, to taste 6 slices sourdough or multigrain bread Butter-flavored vegetable cooking spray 6 thick slices tomato Paprika, as garnish |

Method: Saute onion in margarine in medium saucepan until tender, 2 to 3 minutes. Stir in flour and cook 1 minute. Whisk in milk and wine, heat to boiling. Boil, whisking until thickened, about 1 minute. Stir in cheese and dry mustard, whisk over low heat until cheeses are melted. Season to taste with white and cayenne pepper. Spray both sides of bread with cooking spray, cook over medium heat in large skillet until browned, 2 to 3 minutes on each side. Saute tomato slices in lightly greased medium skillet until hot, 2 to 3 minutes. Top bread with tomato slices and spoon cheese sauce over. Sprinkle with paprika.
