Tomato, Spinach and Cheese Burritos Recipe

Ingredients:

1 cup each: fat-free and reduced-fat ricotta cheese

1 teaspoon grated parmesan cheese

3/4 teaspoon chili powder

1/2 teaspoon each: crushed red pepper, ground cumin

4 flour tortillas

4 ounces spinach leaves, thinly sliced

1 large tomato, chopped

Olive oil cooking spray

1/2 cup each: prepared salsa, fat-free sour cream

Method:

Combine cheeses and seasonings in medium bowl, Spread 1/2 cup cheese mixture in center of each tortilla, sprinkle with spinach and tomato. Fold 2 sides of each tortilla in about 2 inches, then fold in other sides to enclose filling. Arrange burritos, seam sides down, in greased baking pan, spray lightly with cooking spray. Bake at 400 degrees until browned, about 25 minutes. Serve with salsa and sour cream.
