Sweet Potato Hash with Poached Eggs Recipe4 servings
Ingredients: 2 cups each: cubed, peeled cooked sweet potatoes, Idaho potatoes 1/2 cup each: chopped onion, red bell pepper 1 teaspoon dried rosemary leaves 1/2 teaspoon dried thyme leaves Vegetable cooking spray Salt and pepper, to taste 4 poached or fried eggs |

Method: Sauté vegetables and herbs in lightly greased large skillet 5 minutes, spray with cooking spray and cook until potatoes are browned, about 5 minutes. Season to taste with salt and pepper. Top each serving of hash with an egg. |
