Pasta Frittata Recipe

Pasta Frittata Recipe

4 servings

 

Ingredients:

2 cups cooked thin spaghetti

2 eggs, lightly beaten

2 tablespoons grated Parmesan cheese

1/2 teaspoon salt

1/4 teaspoon pepper

1 cup cauliflower florets

3/4 cup each: sliced carrots, red bell peppers

1/2 cup each: sliced zucchini, chopped tomato

1/4 cup sliced green onions

1 1/2 teaspoons dried Italian seasoning

1 tablespoon each: minced garlic, olive oil

Salt and pepper, to taste

Method:

Mix spaghetti, eggs, cheese, salt and pepper, spread evenly in lightly greased medium skillet. Cook, uncovered, over medium heat until browned on bottom, about 5 minutes. Slide frittata onto plate, invert into skillet and cook until browned on other side, about 5 minutes, keep warm on low heat.

 

Sauté vegetables and herbs in oil in large skillet until tender, 8 to 10 minutes, season to taste with salt and pepper. Serve vegetables over frittata.
