Eggs Scrambled with Crisp Tortilla Strips Recipe6 servings
Ingredients: 6 corn tortillas, cut into strips Vegetable cooking spray 9 eggs, lightly beaten 3 tablespoons fat-free milk Salt and pepper, to taste 3 tablespoons each: crumbled Mexican white cheese or farmer's cheese, chopped cilantro Poblano chili sauce, warm Black beans and rice, warm |

Method: Spray tortilla strips lightly with cooking spray and toss, cook in large skillet over medium to medium-high heat until browned and crisp, 3 to 4 minutes. Pour combined eggs and milk over tortilla strips, cook over medium to medium-low heat until eggs are cooked, stirring occasionally. Season to taste with salt and pepper, sprinkle with cheese and cilantro. Serve with poblano chili sauce and black beans and rice. |
