Tamale Pie Recipe

Ingredients:

1 pound lean ground beef

1 medium onion, chopped

1 clove garlic, minced

1 can reduced-sodium tomato sauce

1 can diced green chilies, drained

1 cup each: whole kernel corn, shredded fat-free Cheddar cheese

2 teaspoons each: chili powder, ground cumin

2 cups water

1 cup yellow cornmeal

3-4 drops hot pepper sauce

Method:

Saute ground beef, onion, and garlic in large skillet until beef is browned, about 8 minutes, stir in remaining ingredients, except water, cornmeal, and hot pepper sauce. Spread mixture on bottom of greased 2-quart baking dish.

 

Heat water to boiling in large saucepan, gradually stir in cornmeal. Reduce heat and simmer until thickened, about 5 minutes, stirring frequently. Stir in hot pepper sauce, pour over meat mixture in casserole. Bake, uncovered, at 375 degrees until hot and browned, about 20 minutes.
