Salmon, Snow Pea and New Potato Casserole Recipe

Easy, colorful, delicious!

 

Ingredients:

4 salmon fillets (about 4 ounces each)

2 tablespoons margarine or butter, room temperature

Salt and pepper, to taste

1 tablespoon dried tarragon leaves

1 small lemon, thinly sliced

8 ounces snow peas

6 small new potatoes, peeled, quartered

1/3 cup apple cider

Method:

Place salmon in greased 12 x 9-inch baking dish; spread each fillet with margarine. Sprinkle lightly with salt, pepper, and tarragon, cover with lemon slices. Arrange snow peas and potatoes around fish, sprinkle with salt and pepper. Pour cider over. Bake, covered, at 350 degrees until fish flakes with fork and potatoes are tender, 20 to 30 minutes.
