Creamed Spinach Sauce Recipe

3 cups



2 cloves garlic, minced

2 tablespoons margarine or butter

1/4 cup all-purpose flour

3 cups 2% reduced-fat milk

1 1/2 pounds fresh spinach, chopped

2 teaspoons dried basil leaves

1/4 teaspoon ground nutmeg

4-6 dashes hot pepper sauce

Salt, to taste


Saute garlic in margarine in large saucepan 1 to 2 minutes. Stir in flour and cook over medium heat 1 minute. Whisk in milk, heat to boiling, whisking until thickened, about 1 minute. Stir in remaining ingredients, except salt, cook over medium heat until spinach is cooked, 5 to 7 minutes. Season to taste with salt.
