Chicken Vegetable Manicotti with Creamed Spinach Sauce Recipe

Ingredients:

1/2 cup chopped onion

3 cloves garlic, minced

2 cups loosely packed chopped spinach leaves

1/2 cup each: chopped zucchini, yellow summer squash

1 teaspoon each: dried basil and oregano leaves

8 ounces boneless, skinless chicken, cooked, finely shredded

3/4 cup fat-free ricotta cheese

Salt and pepper, to taste

1 package manicotti shells, cooked al dente

Creamed Spinach Sauce

Method:

Saute onion and garlic in lightly greased large skillet until tender, about 3 minutes. Add vegetables and herbs, saute until tender, 5 to 8 minutes. Stir in chicken and cheese, season to taste with salt and pepper. Spoon about 3 tablespoons mixture into each manicotti, arrange in baking pan and spoon Creamed Spinach Sauce over. Bake at 350 degrees, loosely covered, until manicotti are hot and sauce is bubbly, 35 to 40 minutes.
