Strawberry Cream Pie Recipe

Ingredients:

1 1/4 cups reduced-fat graham cracker crumbs

4-5 tablespoons margarine or butter, melted

6 1/4 teaspoons Equal sweetener, divided

8 ounces fat-free cream cheese, room temperature

1 teaspoon vanilla

1 cup boiling water

1 package sugar-free strawberry gelatin

2 cups sliced strawberries

Light whipped topping, as garnish

Method:

Mix graham cracker crumbs, margarine, and 1 teaspoon Equal sweetener in 8-inch pie pan, pat evenly on bottom and side of pan. Bake at 350 degrees until lightly browned, 6 to 8 minutes. Cool.

 

Beat cream cheese, vanilla, and 1 3/4 teaspoons Equal sweetener in small bowl until fluffy, spread evenly in bottom of crust.

 

Pour boiling water over gelatin, and remaining 3 1/2 teaspoons Equal in bowl, whisking until gelatin is dissolved. Refrigerate until mixture is the consistency of unbeaten egg whites, 20 to 30 minutes. Arrange half the strawberries over the cream cheese, spoon half the gelatin mixture over strawberries. Arrange remaining strawberries over pie and spoon remaining gelatin mixture over. Refrigerate until pie is set and chilled, 2 to 3 hours. Serve with light whipped topping.
