Rich Lemon Pound Cake Recipe

Ingredients:

3/4 cup sugar

1/3 cup margarine or butter, room temperature

1 cup reduced-fat sour cream

3 egg whites

2 teaspoons lemon juice

1 tablespoon grated lemon zest

2 1/2 cups cake flour

1 teaspoon baking soda

1/4 teaspoon salt

Lemon Syrup

Powdered sugar, as garnish

Method:

Beat sugar and margarine in large bowl until fluffy, beat in sour cream, egg whites, lemon juice, and zest until smooth. Mix in combined flour, baking soda and salt, beating about 1 minute. Spoon into greased and floured 6-cup fluted cake pan.

 

Bake 40 to 50 minutes or until toothpick inserted in center of cake comes out clean. Cool in pan on wire rack 20 minutes. Pierce cake at 1-inch intervals with skewer or long-tined for, Spoon warm Lemon Syrup over and let stand 30 minutes. Invert onto serving plate, sprinkle generously with powdered sugar.
