Mocha Latte Pudding Cake Recipe6 servings For the ultimate treat serve warm, topped with scoops of sugar-free ice cream or frozen yogurt.
Ingredients: 1 cup all-purpose flour 1/2 cup packed light brown sugar 6 tablespoons Dutch process cocoa, divided 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup fat-free milk 2 tablespoons vegetable oil 1 teaspoon vanilla 1 teaspoon espresso coffee powder 1/2 teaspoon ground cinnamon 1 1/2 cups boiling water |

Method: Combine flour, brown sugar, 3 tablespoons cocoa, baking powder, instant espresso coffee powder, ground cinnamon and salt in medium bowl. Add combined milk, oil, and vanilla to flour mixture, mixing well. Spoon batter into greased 8 or 9-inch square baking pan, sprinkle with combined remaining 3 tablespoons cocoa and granulated sugar. Pour boiling water over batter, do not stir. Bake at 350o until cake springs back when touched, about 30 minutes. Cool on wire rack 5 to 10 minutes, serve warm.
