Light Lemon Squares Recipe

1 dozen cookies

Ingredients:

2 eggs

5 1/2 teaspoons Equal sweetener

1/3 cup lemon juice

4 tablespoons margarine or butter, melted, cooled

1 tablespoon grated lemon zest

Rich Pastry

Method:

Beat eggs and Equal sweetener, mix in lemon juice, margarine, and lemon zest. Pour mixture into baked Rich Pastry. Bake at 350 degrees until filling is set, about 15 minutes. Cool on wire rack.
