Lemon Custard RecipeMakes about 2 cups
Ingredients: 1/3 cup sugar 1/4 cup cornstarch 1/4 teaspoon salt 1 1/3 cup fat free milk 1 egg yolk 2 tablespoons margarine or butter 2 teaspoons grated lemon zest 1/3 cup lemon juice |

Method: Combine sugar, cornstarch, and salt in medium saucepan, whisk in milk. Heat to boiling over medium-high heat, whisking constantly, boil, whisking, until thickened, about 1 minute. Whisk about 1/2 cup milk mixture into egg yolk, whisk yolk mixture back into saucepan. Cook over low heat, whisking 1 to 2 minutes. Remove from heat, stir in margarine, lemon zest, and lemon juice. Cool, refrigerate until chilled. |
