Gingered Pear Cake Recipe12 servings
Ingredients: 1 cup packed light brown sugar 1/4 cup margarine or butter, room temperature 1 egg 1 1/2 cups all-purpose flour 1 1/2 teaspoons baking soda 1/4 teaspoon each: ground cloves, salt 1 teaspoon ground ginger 2 tablespoons chopped crystallized ginger 2 small pears, peeled, cored, shredded Gingered Sour Cream Topping |

Method: Beat brown sugar, margarine and egg in large bowl until smooth, mix in combined lour, baking soda, salt, spices, and crystallized ginger. Gently mix in pears. Pour batter into greased and floured 6-cup fluted tube pan.
Bake at 350 degrees until toothpick inserted in center of cake comes out clean, 50 to 60 minutes. Cool cake in pan on wire rack 10 minutes, remove from pan and cool. Serve with Gingered Sour Cream Topping. |
