Cheesecake Cupcakes Recipe20 servings
Ingredients: 3/4 cup each: all-purpose flour, sugar reduced-fat buttermilk 1/3 cup unsweetened cocoa 3/4 teaspoon baking soda 1/2 teaspoon salt 1/4 cup shortening 1 egg 1 teaspoon vanilla 1/2 cup reduced-fat semisweet chocolate morsels
Cheesecake Topping: 8 ounces fat-free cream cheese, room temperature 1/2 cup sugar 1 egg |

Method: Combine all ingredients, except Cheesecake Topping and chocolate morsels, in large bowl. Beat at low speed until blended, beat at high speed 3 minutes, scraping side of bowl occasionally. Pour batter into paper-lined muffin cups, filling each about 1/2 full. Spread about 1 tablespoon Cheesecake Topping over batter in each, covering completely. Sprinkle each with about 1 teaspoon chocolate morsels. Bake at 350 degrees until golden, about 30 minutes. Cool in pans on wire rack.
Cheesecake Topping: Mix all ingredients until smooth. |
