Wild Rice Muffins Recipe

12 muffins



1 cup fat-free milk

4 tablespoons margarine or butter, melted

1 egg

1/2 cup wild rice, cooked, cooled

1 cup all-purpose flour

1/2 cup whole wheat flour

3 tablespoons baking powder

1 tablespoon sugar

1/2 teaspoon salt


Mix milk, margarine, egg, and rice in large bowl. Add combined flours, baking powder, sugar, salt, mixing just until dry ingredients are moistened.


Spoon batter into 12 greased muffin cups. Bake at 400 degrees until browned, 20 to 25 minutes. Remove from pans and cool on wire racks.
