Very Berry Muffins Recipe18 muffins
Ingredients: 2 1/2 cups all-purpose flour 1/2 teaspoon baking soda 2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup packed light brown sugar 1 1/2 cups low fat buttermilk 1/4 cup vegetable oil 1 egg, beaten 1/2 teaspoon lemon extract 1 teaspoon vanilla extract 1 package frozen, unsweetened blueberries |

Method: Combine flour , baking soda, baking powder, salt and brown sugar in large bowl. Add combined remaining ingredients, except blueberries, mixing until dry ingredients are just moistened, fold in blueberries. Spoon batter into 18 greased muffin cups, filling 3/4 full. Bake at 350 degrees until muffins are browned and toothpick inserted in centers comes out clean, 20 to 25 minutes. |
