Multigrain Batter Bread Recipe

2 loaves



3 1/4 cups all-purpose flour

1 cup whole wheat flour

1/4 cup soy flour

3/4 cup quick-cooking oats

1/4 cup sugar

1/2 teaspoon salt

2 packages fast-rising yeast

1 cup cooked brown rice

2 1/4 cups fat-free milk, hot (120-130 degrees)

2 tablespoons vegetable oil


Combine flours, oats, sugar, salt and yeast in large bowl, add rice, milk and oil, mixing until smooth. Spoon into 2 greased 8 x 4-inch bread pans, let stand, covered, until double in size, about 30 minutes. Bake at 375 degrees until loaves are browned and sound hollow when tapped, 35 to 40 minutes. Remove from pans and cool on wire racks.
