Mandarin Pancakes Recipe

Makes 12 pancakes



1/3 cup boiling water

1 cup all-purpose flour

Vegetable cooking spray


Stir water into flour in small bowl until crumbly, shape into a ball. Knead on lightly floured surface until smooth and satiny, about 10 minutes. Let stand, covered, 30 minutes. Divide dough into 12 equal pieces, shape into 12 balls.


Roll 2 balls into 3-inch circles with lightly floured rolling pin, spray 1 circle lightly with cooking spray and cover with remaining circle. Roll both circles together into a 6-inch circle being careful not to wrinkle dough. Cook dough circle in lightly greased skillet over medium to medium-high heat until it blisters and is the color of parchment paper, turning frequently with chop sticks or tongs. Remove from skillet, separate into 2 pancakes with pointed knife. Repeat process with remaining dough, making only 1 or 2 dough circles at a time.
