Green Chili Corn Bread Recipe

Ingredients:

1/4 cup copped red bell pepper

2 cloves garlic, minced

1/2 teaspoon cumin seeds, crushed

1 1/4 cups yellow cornmeal

3/4 cup all-purpose flour

2 teaspoons baking powder

1 teaspoon spoon

1/2 teaspoon each: baking soda, salt

1 1/4 cups buttermilk

1/2 cup canned cream-style corn

1 can chopped hot or mild green chilies, well drained

2 eggs

3 1/2 tablespoons margarine or butter, melted

Method:

Saute bell pepper, garlic, and cumin seeds in lightly greased small skillet until pepper is tender, 2 to 3 minutes. Combine cornmeal, flour, baking powder, sugar, baking soda, and salt in large bowl. Mix in bell pepper mixture, buttermilk, and remaining ingredients, spread in greased 8-inch square baking pan. Bake at 425 degrees until golden, about 30 minutes. Cool in pan on wire rack, serve warm.
