Fruited Bran Bread Recipe

1 loaf

 

Ingredients:

1 1/4 cups all-purpose flour

1/2 cup whole wheat flour

2 teaspoons baking powder

1/2 teaspoon each: baking soda, salt

1 1/2 cups whole bran cereal

1 1/3 cups buttermilk

3/4 cup packed light brown sugar

3 tablespoons margarine or butter, melted

1 egg

1 cup coarsely mixed dried fruit

1/4 - 1/2 cup chopped walnuts

Method:

Combine flours, baking powder, baking soda, salt, and bran cereal in medium bowl. Add buttermilk, brown sugar, margarine, and egg, mixing just until dry ingredients are moistened. Gently fold in dried fruit and walnuts. Pour into greased and floured 9 x 5 - inch loaf pan. Bake at 350 degrees until wooden pick inserted in center comes out clean, about 1 hour. Remove from pan; cool on wire rack before slicing.
