Fruit Focaccia Recipe

1 cup boiling water

1/2 cup each: dried cranberries or cherries, dried fruit bits

1 Focaccia

2 tablespoons granulated sugar

1 tablespoon melted margarine or butter

1/3 cup packed light brown sugar


Pour boiling water over combined dried fruit in bowl, let stand until softened, 10 to 15 minutes. Drain.


Make Focaccia, adding granulated sugar to the flour mixture. After first rising, spread dough in greased baking dish, 11 x 7 inches. Let rise until double in size, about 30 minutes. Make 1/4 inch indentations with fingers to dimple dough. Spread margarine over dough, sprinkle with fruit and brown sugar. Bake at 425 degrees until browned, 20 to 25 minutes.
