Cardamom Pear Muffins Recipe

12 muffins



1 cup fat-free milk

4 tablespoons margarine or butter, melted

1 egg

2 cups all-purpose flour

1/3 cup plus 2 tablespoons sugar, divided

3 teaspoons baking powder

1/2 teaspoon salt

1 cup chopped dried pears

1 teaspoon grated orange or lemon zest

1/2 teaspoon ground cardamom


Mix milk, margarine, and egg in medium bowl. Add combined flour, 1/3 cup sugar, baking powder, and salt, mixing just until dry ingredients are moistened. Gently mix in pears and orange zest.


Spoon batter into 12 greased muffin cups, sprinkle with remaining 2 tablespoons sugar and cardamom. Bake at 400 degrees until muffins are browned and toothpick inserted in centers of muffins comes out clean, 20 to 25 minutes. Remove from pans and cool on wire racks.
