Bubble Loaf Recipe

1 loaf



2 packages active dry yeast

1 cup fat-free milk, warm

6 tablespoons margarine or butter room temperature

1/4 cup sugar

3 eggs

4 cups all-purpose flour

1/2 teaspoon salt


Stir yeast into milk in bowl, let stand 2 to 3 minutes. Beat margarine and sugar until fluffy in large bowl, beat in eggs, 1 at a time. Mix in combined flour and salt alternately with milk mixture, beginning and ending with dry ingredients and beating well after each addition. Let stand, covered, in warm place until dough is double in size, about 1 hour. Punch dough down.


Drop dough by large spoonfuls into greased 10-inch tube pan. Let, rise, covered, until dough is double in size, about 30 minutes. Bake at 350 degrees until browned, 25 to 30 minutes. Cool in pan on wire rack 10 minutes, remove from pan. Serve warm.
