Banana Bread Recipe

1 loaf



4 tablespoons margarine or butter, room temperature

1/4 cup apple sauce

2 eggs

2 tablespoons fat-free milk or water

3/4 cup packed light brown sugar

1 cup mashed banana

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup coarsely chopped walnuts or pecans


Beat margarine, apple sauce, eggs, milk and brown sugar in large mixer bowl until smooth. Add banana and mix at low speed, beat at high speed 1 to 2 minutes. Mix in combined flour, baking powder, baking soda, and salt, mix in walnuts. Pour into greased 8 x 4-inch loaf pan. Bake at 350 degrees until bread is golden and toothpick inserted in center comes out clean, 55 to 60 minutes. Cool in pan 10 minutes, remove from pan and cool on wire rack.
