Sun-Dried Tomato Hummus Recipe

8 servings (about 1/4 cup each)

Sun-dried tomatoes and herbs embellish this Mediterranean favorite.

 

Ingredients:

1 can (15 ounces) chick peas, rinsed, drained

1/3 cup fat-free yogurt

2-3 tablespoons tahini (sesame seed paste)

3 cloves garlic

4 sun-dried tomato halves (not in oil), finely chopped

1 teaspoon each: dried oregano and mint leaves

2-3 teaspoons lemon juice

Salt and white pepper, to taste

Dippers: pita breads, cut into wedges, or Pita Chips

Method:

Process chick peas, yogurt, tahini, and garlic in a food processor until smooth. Stir in sun-dried tomatoes and herbs; season to taste with lemon juice, salt, and white pepper. Refrigerate 1 to 2 hours for flavors to blend. serve with dippers (not included in the nutritional data)
