Pasta Pizza Recipe

Ingredients:

4 ounces reduced-fat turkey Italian sausage, casing removed

1 cup sliced mushrooms

1/2 cup chopped onion

4 sun-dried tomatoes softened, chopped

1 tablespoon each: finely chopped fresh or 1 teaspoon dried oregano and basil leaves

1/4 teaspoon each: pepper and salt

6 ounces fettuccine, cooked

1 egg white, beaten

1 tablespoon finely chopped parsley

1 1/2 ounces goat cheese and reduced-fat cream cheese

Method:

Cook sausage in lightly greased medium skillet over medium heat until browned, drain and crumble. Add mushrooms, onion, and tomatoes to skillet and saute until tender, about 5 minutes. Stir in seasonings. Combine fettuccine, egg white, and parsley, add to lightly greased 10-inch skillet and pat into even layer with pancake turner. Spoon sausage-vegetable mixture over and dot with cheese. Cook over medium heat, covered, 5 minutes. Uncover and cook 5 minutes more or until pasta is lightly browned on bottom. Cut into wedges.
