Custard Topping Recipe

1/3 cup margarine or butter

1/2 cup all-purpose flour

3 cups fat-free milk

2 eggs, lightly beaten

Salt and white pepper, to taste


Melt margarine in medium saucepan, whisk in flour and cook over medium heat 2 minutes. Whisk in milk and heat to boiling, whisking until thickened, about 1 minute. Whisk about 1 cup milk mixture into eggs, whisk egg mixture back into saucepan. Cook over low heat, whisking until thickened, 2 to 3 minutes. Season to taste with salt and white pepper.
