Chili Con Queso Recipe12 serving Our health-conscious version of this popular dip is made with reduced-fat pasteurized processed cheese for creamy texture and fat-free Cheddar cheese for accented flavor.
Ingredients: 5 medium anaheim or 2 medium poblano chilies, seeds and veins discarded, cut into halves 1/3 cup each, chopped onion, tomato 1/2 teaspoon dried oregano leaves 2 cups shredded reduced-fat pasteurized processed cheese 1 cup shredded-fat-free Cheddar cheese 2-4 tablespoons fat-free milk Baked tortilla chips |
Method: Place chilies, skin sides up, on baking pan. Brol 6 inches from heat source until chilies are browned and soft, 5 to 8 minutes. Cool and cut into strips. Saute onion, tomato and oregano in lightly greased skillet until onion is tender, about 5 minutes. Add cheeses and chili strips; cook over low heat until cheeses are melted, stirring in milk for desired consistency. Serve warm with tortilla chips (not included in nutritional data).
